- 1 cup cooked sweet potato (mashed)
- 2 eggs
- 1/4 cup natural peanut butter (no xylitol)
- 2 cups oat flour
- 1/2 teaspoon cinnamon (optional)
- 1 teaspoon baking powder
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mash the banana and sweet potato.
- Add eggs and peanut butter to the mashed mixture. Stir well.
- In a separate bowl, mix oat flour, cinnamon, and baking powder.
- Combine the wet and dry ingredients. Stir until a thick batter forms.
- Spoon batter into muffin cups, filling them 3/4 full.
- Bake for 25-30 minutes, until a toothpick comes out clean.
- Let the muffins cool completely before serving.
