  • 1 egg

  • 1/2 cup grated carrots
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon chopped parsley
  • Optional: 1 tablespoon flaxseed

Instructions

 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, pumpkin puree, egg, oats, grated carrots, and olive oil. Add parsley or flaxseed if using. Mix thoroughly until well-combined.
  3. Scoop out portions of the mixture with a cookie scoop or tablespoon and roll into balls about the size of a walnut. Place them on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the beef is cooked through and the balls are firm to the touch.
  5. Allow the beef and pumpkin balls to cool completely on a wire rack before serving.
