- 2 tablespoons coconut oil (melted)
- 1 tablespoon maple syrup or honey (optional)

- Pinch of salt
Instructions
- In a blender or food processor, combine the blueberries, almond flour, coconut oil, vanilla extract, and salt. Blend until smooth but leave small pieces of blueberries intact.
- Using a cookie scoop or spoon, form the mixture into small balls.
- Roll each ball in shredded coconut to fully coat them.
- Place the balls on a parchment-lined tray and freeze for 1-2 hours or until firm.
- Once frozen, enjoy straight from the freezer or let them soften slightly at room temperature before eating!
