Ingredients

  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1/4 cup oat or coconut flour
  • 2 tablespoons natural peanut butter (no xylitol)

Instructions

  1. Wash the spinach and blueberries thoroughly.
  2. Place the spinach, blueberries, and peanut butter in a blender or food processor. Blend until a thick paste forms. Add a small amount of water if necessary.
  3. Transfer the mixture to a bowl and gradually add the oat or coconut flour, stirring until a dough-like consistency is reached. Optionally, fold in shredded coconut for added texture.
  4. Scoop out small portions and roll into bite-sized balls.
