Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Cook and mash 1 cup of carrots until smooth.
- In a large bowl, mix the mashed carrots, whole wheat flour, egg, and coconut oil to form a dough. If it’s sticky, gradually add more flour.
- In a separate bowl, blend parsley or spinach with water to create a puree.
- Divide the dough into two equal portions. Knead the green puree into one half, leaving the other half orange.
- Roll each portion into ropes about 1/2 inch in diameter and cut into 5-6 inch pieces.
- Twist one green rope and one orange rope together, forming a candy cane shape by bending the top.
- Place the treats on the baking sheet and sprinkle with sea salt if desired.
- Bake for 20-25 minutes or until firm and golden brown.
- Let the treats cool completely before serving or storing.
