Ingredients

  • 1/4 cup low-sodium chicken broth
  • 1 egg
  • Optional: 1 tablespoon flaxseed meal
  • Optional: 1/4 cup grated carrot

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cook the chicken until fully done, then shred it into small pieces. Chop the broccoli florets into small pieces.
  3. In a large mixing bowl, combine the pumpkin puree, applesauce, chicken broth, and egg, whisking until well mixed.
  4. Fold in the shredded chicken and chopped broccoli until evenly distributed.
  5. In a separate bowl, mix the oat flour with any optional ingredients, like flaxseed meal or grated carrot.
  6. Slowly add the dry ingredients to the wet mixture, stirring until a thick batter forms. Add more chicken broth if the batter is too dry.
  7. Divide the batter evenly among the cupcake liners, filling each about three-quarters full.
  8. Bake for 20-25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
