Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or silicone molds.
- In a large bowl, combine whole wheat flour and baking powder. Stir well.
- In a separate bowl, whisk together applesauce, egg, and water. Add shredded chicken and grated carrots and mix well.
- Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool completely on a wire rack before frosting.
- For the frosting, mix Greek yogurt and unsweetened applesauce until smooth. Frost the cooled cupcakes and garnish with shredded carrots if desired.
