- 1/2 cup cooked rice (white or brown)
- 1 egg
- 1/4 cup low-sodium chicken broth
- 1 1/2 cups whole wheat flour
- 1/4 cup oat flour (or finely ground rolled oats)
- 1 tbsp fresh parsley, finely chopped (optional)
- 1 tbsp olive oil
- Optional: 1 tbsp ground flaxseed or chia seeds
- Optional: 1/4 tsp turmeric
- Optional: 2 tbsp finely chopped carrots or peas
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a mixing bowl, combine cooked chicken, rice, and egg. Mix well until evenly blended.
- Add chicken broth and olive oil, stirring until the mixture is wet but not soupy.
- Gradually stir in whole wheat flour and oat flour until a firm, pliable dough forms.
- Mix in optional ingredients like parsley, turmeric, or flaxseed, if using.
- Roll dough on a floured surface to 1/4 inch thickness and cut with bone-shaped cookie cutters.
- Place shaped dough on prepared baking sheet.
- Bake for 25–30 minutes, or until edges are golden brown. For extra crunch, turn off oven and let sit inside for another 30 minutes.
- Allow to cool completely before serving or storing.
