Ingredients

  • ¼ cup unsweetened shredded coconut
  • ¼ cup ground flaxseed
  • 2 tablespoons water (adjust as needed)

Instructions

  1. Finely grate the carrots and gather all ingredients.
  2. In a large mixing bowl, combine peanut butter, grated carrots, honey, ground flaxseed, and shredded coconut. Mix well.
  3. Gradually add oats while stirring. If the mixture is too dry, add water one tablespoon at a time until it reaches a moldable consistency.
  4. Take small portions of the dough and shape them into egg forms using your hands.
  5. Place the shaped treats on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
