Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter and 1/4 cup of water, stirring until smooth.
- Add the grated carrots to the peanut butter mixture and mix until evenly combined.
- Gradually add the flour to the wet mixture, stirring until a dough forms. Add water by the teaspoon if needed to reach a pliable consistency.
- On a lightly floured surface, roll out the dough to about 1/4-inch thickness and cut into shapes using cookie cutters or a knife.
- Place the shaped biscuits on the prepared baking sheet, leaving a bit of space between each biscuit.
- Bake for 20-25 minutes or until the edges are golden brown. For a crunchier texture, leave the biscuits to cool inside the oven with the door slightly open.
- Remove the biscuits and let them cool completely on a wire rack before serving.
