- 1 cup pure pumpkin puree (not pumpkin pie filling)
- 1/2 cup unsweetened applesauce
- 2 tablespoons olive oil (or melted coconut oil)
- 2 cups whole wheat flour (or oat flour for gluten-free options)
- 1/2 cup rolled oats
- 1 teaspoon cinnamon (optional)
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, whisk together the pumpkin puree, applesauce, and olive oil until smooth.
- Gradually add the whole wheat flour, rolled oats, and cinnamon. Stir until a sticky dough forms. If needed, add more flour one tablespoon at a time.
- Roll out the dough on a floured surface to 1/4-inch thickness and cut into long, thin sticks using a knife or pizza cutter.
- Place the sticks on the baking sheet, leaving space between each one, and bake for 30–35 minutes, flipping halfway through.
- Remove from the oven and let the sticks cool completely on a wire rack for maximum crunch.
