- 1 cup pumpkin puree (unsweetened, NOT pumpkin pie filling)
- ½ cup natural peanut butter (xylitol-free)
- 2 cups oat flour
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or grease lightly.
- In a large bowl, mix the pumpkin puree and peanut butter until smooth.
- Gradually add the oat flour and cinnamon (if using) to form a soft, non-sticky dough.
- Roll the dough into balls or flatten and use cookie cutters to create shapes.
- Place on the prepared baking sheet and bake for 20-25 minutes or until firm and golden.
- Allow to cool completely before serving or storing.
Notes
- If the dough is too sticky, add more oat flour. If too dry, add a splash of water or more pumpkin puree.
- Store treats in an airtight container for up to one week or freeze for up to three months.
- You can substitute sweet potato or applesauce for pumpkin puree if desired.
