Ingredients

  • 1 cup pumpkin puree (unsweetened, NOT pumpkin pie filling)
  • ½ cup natural peanut butter (xylitol-free)
  • 2 cups oat flour
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or grease lightly.
  2. In a large bowl, mix the pumpkin puree and peanut butter until smooth.
  3. Gradually add the oat flour and cinnamon (if using) to form a soft, non-sticky dough.
  4. Roll the dough into balls or flatten and use cookie cutters to create shapes.
  5. Place on the prepared baking sheet and bake for 20-25 minutes or until firm and golden.
  6. Allow to cool completely before serving or storing.

Notes

  • If the dough is too sticky, add more oat flour. If too dry, add a splash of water or more pumpkin puree.
