- 1 egg
- 1/4 cup oat flour (or coconut flour)
- 1/4 cup fresh parsley (chopped, optional)
- 1 tablespoon coconut oil (for frying)
- 1/4 teaspoon turmeric powder (optional)
- Optional: 1/4 cup shredded carrots, 1 tablespoon ground flaxseed
Instructions
- Cook sweet potatoes: Microwave for 6-8 minutes or bake at 400°F for 45 minutes. Cool, peel, and mash.
- Cook salmon: In a pan with water over medium heat, cook until opaque, about 5-7 minutes. Flake and check for bones.
- Mix ingredients: In a bowl, combine mashed sweet potatoes, flaked salmon, egg, flour, and parsley (plus optional add-ins).
- Form patties: Shape mixture into golf-ball-sized balls, flatten into patties.
- Cook: Heat coconut oil in a skillet. Cook patties for 3-4 minutes per side, until golden. Cool before serving.

- Store patties in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
