Ingredients

Scale

  • 2 medium-sized sweet potatoes
  • 1 large salmon fillet (boneless, skinless, about 1 pound)
  • 1 egg
  • 1/4 cup oat flour (or coconut flour)
  • 1/4 cup fresh parsley (chopped, optional)
  • 1 tablespoon coconut oil (for frying)
  • 1/4 teaspoon turmeric powder (optional)
  • Optional: 1/4 cup shredded carrots, 1 tablespoon ground flaxseed

Instructions

  1. Cook sweet potatoes: Microwave for 6-8 minutes or bake at 400°F for 45 minutes. Cool, peel, and mash.
  2. Cook salmon: In a pan with water over medium heat, cook until opaque, about 5-7 minutes. Flake and check for bones.

  4. Form patties: Shape mixture into golf-ball-sized balls, flatten into patties.
  5. Cook: Heat coconut oil in a skillet. Cook patties for 3-4 minutes per side, until golden. Cool before serving.

Notes

  • Store patties in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
  • Feel free to add optional ingredients like shredded carrots for extra crunch or ground flaxseed for more Omega-3s.
