Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Boil or steam the cubed sweet potatoes for 10-15 minutes until soft.
- Mash sweet potatoes in a large bowl until smooth.
- Sauté spinach in coconut oil for 2-3 minutes until wilted.
- Add the spinach, egg, flaxseed meal (if using), and oat flour to the mashed sweet potatoes. Mix well.
- Shape the mixture into patties or balls and place on the baking sheet.
- Bake for 25-30 minutes until firm and golden. Let cool before serving.
