- 1 cup fresh strawberries (washed, hulled, and finely chopped)
- 2 cups oat flour
- 1/4 cup unsweetened applesauce
- 1 tablespoon coconut oil (optional)
- 1 tablespoon chia seeds or ground flaxseed (optional)
Instructions
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper or lightly grease it.
- Add 2 cups of rolled oats to a blender or food processor to create oat flour, if needed.
- In a small bowl, mash 1 cup of fresh strawberries until a chunky puree forms.
- In a large mixing bowl, combine the mashed strawberries, oat flour, applesauce, and coconut oil (if using). Mix until a dough-like consistency forms. Add more oat flour if too sticky or a teaspoon of water if too dry.
- Sprinkle a flat surface with oat flour, place the dough on it, and roll it out to about 1/4 inch thickness.
- Use a cookie cutter or knife to cut out treat shapes, and arrange them on the baking sheet.
- Bake the treats for 20-25 minutes or until the edges are golden brown.
- Allow the treats to cool completely on a wire rack before serving.
Notes
- If the dough is too sticky, add more oat flour gradually.
- Store cooled treats in an airtight container at room temperature for up to 7 days, in the fridge for up to 3 weeks, or freeze for up to 3 months.
- Optional mix-ins like blueberries or peanut butter can be added for extra flavor and nutrition.
