- 2 large sweet potatoes, peeled and diced
- 1 pound ground chicken (or turkey)
- 1 egg
- 1 cup rolled oats
- 1/2 cup finely chopped carrots
- 1/4 cup peas (optional)
- 1 tablespoon olive oil or coconut oil
Instructions
- Preheat the Oven to 350°F (175°C).
- Cook the Sweet Potatoes: Boil the diced sweet potatoes for about 10 minutes or until soft. Drain and mash them lightly.
- Mix Ingredients: In a large bowl, combine the ground chicken, mashed sweet potatoes, oats, chopped carrots, peas (optional), and egg. Mix thoroughly.
- Prepare the Pan: Lightly grease a loaf pan with olive oil or coconut oil.
- Bake: Press the mixture into the pan and bake for 45-60 minutes or until cooked through and firm.
- Cool & Serve: Let the meatloaf cool completely before slicing into portions.
