Instructions

- Steam or boil the sweet potatoes until fork-tender, approximately 15-20 minutes.
- Mash the sweet potatoes in a large mixing bowl until smooth, ensuring no lumps.
- Add the chopped curly parsley and oat flour to the mashed sweet potatoes and mix well.
- Optional: Add an egg for binding if the mixture is crumbly.
- Shape the mixture into small balls, rectangles, or press into cookie cutters for fun shapes.
- Place the shaped treats on a parchment-lined baking sheet with space between each one.
- Bake for 20-25 minutes until firm but chewy, avoiding overbaking to maintain softness.
