Ingredients

  • 1 lb ground turkey (lean, preferably 93% or higher)
  • 1 cup finely shredded or chopped carrots
  • 1/2 cup rolled oats (quick oats work too)
  • 1/4 cup ground flaxseed
  • 1 egg
  • 1 tablespoon finely chopped parsley (optional)
  • 1/4 teaspoon turmeric (optional)
  • A splash of water or low-sodium chicken broth (if needed for moisture)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grate or finely dice the carrots.
  3. In a large mixing bowl, combine oats, flaxseed, parsley, and turmeric if using.
  4. Add ground turkey, shredded carrots, egg, and a splash of broth or water to the bowl.
  5. Mix everything together until well combined.
  6. Form mixture into small 1 to 1.5-inch balls using your hands or a cookie scoop.
