  • 1 cup pumpkin puree (plain, unsweetened)
  • 1 small zucchini, diced
  • 1 carrot, diced
  • ½ cup green beans, chopped
  • 2 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • ½ tsp turmeric (optional)
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Heat 1 tbsp olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until fully browned, breaking it into small pieces.
  3. Stir in diced zucchini, carrots, and green beans, cooking for 3-4 minutes until slightly softened.
  4. Add low-sodium chicken broth and pumpkin puree, stirring well to combine.
