- 2 large sweet potatoes (peeled and diced)
- 1 cup carrots (chopped)
- 1 cup peas (fresh or frozen)
- 1 cup spinach (chopped)
- 2 tbsp olive oil or coconut oil
- 2 eggs (beaten)
- ½ cup oat flour or chickpea flour
- 1 tsp turmeric (optional)
- 1 cup water or bone broth
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Peel and dice sweet potatoes. Spread on the baking sheet, drizzle with olive oil, and roast for 25-30 minutes, until tender.
- While the sweet potatoes roast, brown the ground turkey in a non-stick pan over medium heat. Break into small pieces and set aside.
- Steam the carrots, peas, and spinach until soft. Set aside to cool.
- In a large bowl, combine the roasted sweet potatoes, turkey, vegetables, eggs, oat flour, and turmeric (if using).
- Pulse the mixture in a food processor until crumbly and uniform. Add water or bone broth as needed for consistency.
- Spread the mixture evenly on a lined baking sheet and press down to ¼-inch thickness.
- Bake at 325°F (160°C) for 30-40 minutes, or until golden and crunchy. Flip halfway for extra crunch.
- Cool completely before breaking into bite-sized kibble pieces.
- Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.
